SUPERFOOD WHITE BUTTON MUSHROOM SCRAMBLE

Serves 4

1 doz. Eggs

8 oz. sliced White Button Mushrooms

8 oz. Shitake Mushrooms

¾ cup diced Onion

2 tsp. fresh thyme

1 cup Shredded White Cheddar Cheese

2 Tb. Sweet Butter

Salt and pepper to taste

Avocado, for garnish diced

In a large bowl whisk the eggs. Add salt and pepper. In a large sauté pan, melt the butter on high heat and add the onions. Sweat for 2 minutes. Add the mushrooms and thyme, seasoning to taste with salt and pepper. Add the eggs and scramble to JUST cooked. Separate on 4 plates and serve with condiment of your choice and toast.
