Cedar Planked Salmon Filet
Ingredients
1/4 cup olive oil
1 lemon juiced
2 tbl garlic, minced
2 tbl fennel seed, toasted ground
1 tsp sea salt
1/2 tsp ground black pepper
2 to 3 pound fillet of salmon, pin bones removed
1 large untreated cedar plank, western red cedar is the best flavor for this cooking technique
Directions
First thing, soak the plank submerged in cold water for 1 hour prior to use. Preheat oven 350 degrees. Place the cedar lank in the oven and preheat for 15 minutes.
Combine the first four ingredients in a bowl and set aside. Lay salmon out on a sheet of aluminum foil and brush with the oil mixture then sprinkle evenly with sea salt and pepper.
Transfer the hot plank from the oven and place on a heat proof surface, transfer the salmon from the foil on to the preheated plank and return to the hot oven and bake for appox 30 minutes or until the fish flakes when tested with a fork. Remove from the oven and serve on the plank, garnished with lemon wedges and romesco sauce.
