Duckhorn Merlot

Our Napa Valley Merlot is a complex and ageable expression of the varietal, highlighting the rich diversity of the Napa Valley appellation. A product of the exceptional 2007 growing season, this wine’s hearty tannins and balanced acidity provide a textural framework for an enticing array of aromas and flavors that begin with notes of bright red cherry, plum, tobacco, vanilla and anise. On the palate, layers of fig, red currant, almond, cedar and sweet spice are revealed, along with a subtle doughiness that lends to an appealing mouthfeel. The final wine has been blended with Cabernet Sauvignon and a touch of Petit Verdot to add nuance and depth.

Chicken Salad w/ Balsamic-Shallott Dressing & Mozzarela Bread

 Ingredients

1 roasted Chicken, chopped (buy one…if feeling ambitious, roast it yourself!)
2 cups butter leaf lettuce
2 cups arugula
½ cup dried blueberries
½ cup dried cranberries
½ cup candied walnuts
1 nectarine, sliced
1 hierloom tomato, diced
½ small red onion, thinly sliced
½ cup diced goat cheese
 

Directions

TOSS together. Make the dressing.

Balsamic- Soy Dressing

Ingredients

¼ cup creamy mustard
1 large shallot chopped finely
½ cup soy sauce light
½ cup balsamic vinegar
¾ cup olive oil light
Salt and pepper to taste

Directions

In a bowl, mix together the first 4 ingredients. Whisk in the oil in a slow steady stream and season with salt and pepper to taste. Make the Mozzarella Bread.  

Mozzarella Croutons

Ingredients

8 slices French bread, cut in 1 inch thick slices
4 Tb Olive oil
Salt pepper to taste
8 Tb finely shredded mozzarella cheese 

Directions

In a sauté pan heat the oil. On medium heat, brown the croutons on the one side. Flip over and turn off the flame. Place a tablespoon of cheese on each crouton and season with salt and pepper. Cover and let melt, about 3 minutes. Toss the chicken salad with the dressing and serve 2 mozzarella breads with the salad.
