French Bacon Omelette

Ingredients
12 large eggs
2 Tb water
salt and pepper to taste
8 sliced smoked bacon, diced and cooked
1/3 cup chives
2/3 cup julienne smoked sun dried tomatoes
4 Tb olive oil
Directions
Scramble the eggs adding the water, bacon, chives and sun dried tomatoes. Heat the olive oil and proceed to make
4 omelettes according to the visual knowledge you can get from the video. It’s the only way!
Skewers
Ingredients
12 baby bufala
12 pear tomatoes
12 garlic cloves, roasted in olive oil
salt and pepper to taste
3 Tb pesto
Directions
Skewer alternating all three ingredients. Dollop a little pesto on top of the mozzarella
Garnish- 4 slices yellow heirloom tomatoes sprinkle with salt and pepper.
