Goat Cheese and Fig Panini
Ingredients
6 slices of walnut bread or bread of choice
Goat cheese or other cheese
1/4 lb proscuitto
1 cup arugula
1/3 cup olive oil
Salt and Pepper
Directions
Spread one side of three slices of bread with goat cheese, not too thick. On the other 3 slices spread the fig jam. Heat 1 tbs of olive oil in fry pan and fry proscuitto, turning once. Remove the proscuitto and lay on top of slices with fig jam. Split the arugula evenly across the slices with the goat cheese. Sprinkle with salt and pepper if desired. Using a grill, grill pan or regular pan, place 2 tbl or olive oil in pan and heat on medium to high flame. Place one sandwich at a time in the pan. Cook to golden brown on each side. Repeat with remaining sandwiches. If using a grill, spray or brush olive oil on the bread and grill on low heat until golden brown.
