Lisa’s Now Famous French Onion Soup Puree
- Makes 10 cups
- 12 red onions sliced
- 4 Tb sweet butter
- Melt the butter in a stock pot until light brown. Add the onions and cook for 10 minutes stirring occasionally.
- 1/2 cup red wine , Lilith Shiraz (Girls in the Vineyard)
- ½ cup white wine
- 1/3 cup Worcestershire sauce
- 1/4 cup Madeira
- 2/3 cup Captain Morgans Rum
- ¼ cup Tequila
- Veggie Stock ( I like the brand Better Than Broth)
- Water
Pour all of the above alcohol into the pot and let boil until ½ way reduced. I know it’s a lot but that why it was sooooooo good! Put as much stock base in that equals whatever the amount of water needed to dilute it. Bring to a boil and then simmer for 2 hours. Puree with an inverted blender. Kitchen Aid makes a good one. If using a blender. Let the soup cool down before you puree it as you don’t want it to explode in your face! Add black pepper. Check for the salt as the broth has salt in it already.
